Amaranth Flaxseed Bread

At least it looks nice from this angle.

I loosely followed this recipe from Bob's Red Mill and took a shot at using some of this amaranth flour my sister had bought. My first impression of amaranth was that it smelled like lawn grass. After baking it and trying it out, I was very disappointed it still tasted like lawn grass. It was rather gross. The grassy taste subsided somewhat after additional time in the oven, but it was still noticeable. The rise was also not what I was looking for. It apparently spread out instead of up, and did not have the structure to hold any bubbles. I do not plan to make this again.

The dough was gooey. I should have adjusted since the humidity was high.

The flatness is evident in this shot of the crumb.

yay for those xml-ized categories so i can skip any potential bug pics. the loaf looks really nice with the flax. too bad u don't like amaranth. i like it and all those other flours because they are different... of course novelty alone isn't enough but the taste isn't really that gross to me at all. it's way easier to get acquianted to than some beers, in my opinion, and is even more tame than like lamb
